Sautéed Garlic Scapes

Garlic scapes, washed and trimmed of tops and any woody parts
Extra virgin olive oil
Sea salt
Freshly ground black pepper

Cut garlic scapes into pieces 2-3 inches long. Heat oil in the skillet and sauté scapes on low-medium heat until lightly browned.  Season with salt and pepper to taste. Use as a side dish,  as a dressing for pasta or as an ingredient in any dish where you might use tender green beans with a very nice garlicky flavor.
