3-4 medium-sized very dark red beets, boiled or roasted, peeled and coarsely grated
1 cup toasted walnuts, roughly chopped
1 cup loosely packed cilantro, chopped (or, if unavailable, 1 tsp ground coriander)
2-3 cloves garlic, minced very fine
0.5 cup seedless raisins
0.5 to 1 cup mayonnaise
Juice of 1/2 lemon
Salt and freshly ground black pepper to taste.
Mix all ingredients thoroughly. Chill before serving. Best made 1 day in advance, to allow the flavors to develop. Serve with our Onion-Dill Rye Bread.
